Chalong Bay works from fresh-pressed sugar-cane juice on Phuket rather than molasses, making this Wild Fermentation release an agricole-style white in spirit if not in protected name. The wild, spontaneous ferment is the signature, and bottling at a high-proof 49% keeps the cane character vivid and the texture lively.
Pot distillation and the cane-juice base give it the hallmark agricole snap, grassy and floral with fresh sugar-cane and a clear streak of lime. The palate stays dry and fresh, creamy in the middle, before a saline finish carrying coconut and a touch of lychee. There is no added sugar to round it off, which is exactly the appeal, and the wild fermentation lends a fruity, vegetal twist of its own. It rewards drinking neat for the detail, and it makes a characterful base for a Ti' Punch or a Daiquiri.
