Chalong Bay Distillery Chalong Bay High Proof is an unaged Thai cane-juice rum from Phuket, pot-distilled from fresh sugarcane juice in the agricole tradition and bottled unsweetened at 57%. It is one of the more expressive cane-juice rums coming out of Southeast Asia, a tropical, characterful blanc that holds together remarkably well at strength.

Working from fresh cane juice rather than molasses gives it a grassy, vegetal freshness, with lychee, papaya, coconut and lime on the nose alongside floral and honeyed notes. The palate turns spicy and complex, eucalyptus and chili meeting milk chocolate and a faint salinity, the finish carrying cocoa and a touch of varnish.
