Description
Cenote Tequila Blanco is a 100% Blue Weber tequila built by maestro tequilero Arturo Fuentes and blender Alejandro Garcia Páez, drawn from agave matured at least six years before harvest. Unusually for a blanco, it is not bottled straight off the still. It rests three weeks in American oak casks before filling, a brief pause meant to round off the edges rather than to age it, so it sits between a true unaged blanco and a lightly rested style.
The agave is steam cooked rather than pit roasted, so there is no smoke here, only cooked sweet agave and citrus. The nose leans green and bright, with cut grass, sugar syrup, white pepper and menthol lifted by fresh pineapple, mango and orange. The palate follows with sweet agave, lime and orange, closing on a faint touch of wood from the short oak rest. Bottled at 40%.
