Cenote Anejo Cristalino is a Blue Weber tequila that spends a year in oak as an anejo, then is filtered clear so it resembles a blanco at a glance. Cristalino is not a NOM aging class but a finishing step: an aged tequila run through activated carbon to strip the color, keeping the barrel derived sweetness while losing much of the oaky grip. The honest read is aged then decolorised, a modern crossover rather than an unaged spirit.
Despite the clear appearance, the profile is built on its year in wood. The nose carries fine spice and oak, while the palate is balanced and layered with vanilla, aromatic oak and delicate spice, finishing on toasted oak and more spice. Cristalinos of this kind lean soft and sweet, lighter on tannin than the anejo they began as. Bottled at 40%.
