The Celtic Cask series is the single cask programme of the Celtic Whiskey Shop, the Dublin retailer and bonder, each release numbered in Irish. This is Fiche a hOcht, the twenty eighth, a Cooley single malt distilled in 2001 and bottled in 2018 at seventeen years old, drawn from cask 6721 in an edition of just 333 bottles for the Irish market.
Maturation began in first fill bourbon barrels before the whiskey was finished in a red Burgundy cask, an unusual pairing that sets Pinot Noir fruit against nearly two decades of American oak. Expect the vanilla and honey of the bourbon wood threaded with red berry and a light winey grip, on the fruity, malty frame typical of aged unpeated Cooley spirit. It was bottled at 46%.
