    An official Caol Ila, an 11 year old, 2001, at 60.4%. A maritime peat smoke carries lemon, sea salt and an oily body, with dried fruit, fig and walnut from the cask. Caol Ila is the largest distillery on Islay. Its tall stills give a lighter, cleaner island spirit. This is an east coast Islay single malt of real charm.

    An official release of Caol Ila, an 11 year old, from 2001, cask 300897, at 60.4%, 618 bottles in all. Caol Ila wears its Islay smoke more lightly than its southern neighbours. The six tall stills sit behind picture windows looking out to Jura.

    Worked from peated malt for the lighter Islay style, shaping the lighter side of Islay. A first fill sherry cask drove a deep, figgy, nutty character. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. The distillery was expanded again in the 21st century to meet blend demand. A few weeks each year the distillery runs an unpeated, Highland style spirit. A ferry crosses the Sound from Port Askaig to Jura and the mainland. The spirit's lightness lets sherry, wine and bourbon casks all show through.

    Undiluted at 60.4%, it is powerful. Smoked lemon, brine and a green olive note, with dried fruit, fig and walnut from the cask. Smoke, lemon and a saline minerality fill the middle. Smoke and sea salt see out a long finish. This is the smoky malt of the Sound of Islay.
