    The Pitlochry bottler Signatory Vintage’s Caol Ila, a 9 year old, 2011, at 46%. Clean peat smoke meets lemon zest and a coastal salt. Its tall stills give a lighter, cleaner island spirit. It stands at Port Askaig, facing Jura across the Sound. The distillery looks out to the Paps of Jura. This is a refined Islay single malt that wears its style lightly.

    The Pitlochry bottler Signatory Vintage released this Caol Ila, a 9 year old, distilled in 2011, from cask 317218 & 317232, bottled at 46%. Caol Ila is among the most widely traded of Islay's single malts. The distillery was expanded again in the 21st century to meet blend demand.

    Distilled slowly from peated malt for a refined island smoke, building a refined, maritime peat. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Early, extractive maturation draws vanillin (vanilla) and furfural (toasted almond) from the wood over a clean, phenolic smoke. Olive oil and lemon sit at the heart of the Caol Ila character. Most of its peated malt is destined for the Johnnie Walker blends. The six tall stills sit behind picture windows looking out to Jura. Refill oak lets the maritime peat and lemon of the spirit lead the way. The medium peating leaves a smoke that is firm but never heavy.

    Bottled at 46%, it is rounded. Smoke, lemon and a peppery oil, with a creamy oak note. A maritime salt and a lemon lift run through it. Ash, lemon and brine draw out the close. This is the smoky malt of the Sound of Islay.
