    The Pitlochry bottler Signatory Vintage picked this Caol Ila, a 9 year old, at 60.1%. A lighter Islay smoke, all lemon, brine and a peppery oil, with dried fruit, fig and walnut from the cask. Water comes from Loch nam Ban, above the distillery. Its casks mature within sound of the sea. This is the lighter, citrus driven face of Islay.

    From the Pitlochry bottler Signatory Vintage, a 9 year old Caol Ila, distilled in 2010, from cask 316659, bottled at 60.1%, one of 673 bottles. Caol Ila makes a clean, maritime malt on the east coast of Islay. The warehouses are ranged along the rocky shore at the water's edge.

    This was distilled in tall stills that lend the smoke an oily lightness, building the elegant Islay smoke at its heart. A sherry cask gave dried fruit and a dark, nutty sweetness. In its extractive youth the spirit takes vanillin vanilla and lactone coconut quickly, the peat phenols vivid and lemony. The lighter style means the cask and the citrus speak alongside the peat. The oily texture comes from the spirit cut, the cask adding depth around it. A ferry crosses the Sound from Port Askaig to Jura and the mainland. Phenols from the peat smoke carry the medicinal, lemony edge through the years.

    At 60.1%, undiluted, it is bold and clean. Smoke, lemon and a peppery oil, with dried fruit, fig and walnut from the cask. The palate is oily and smoky, with a green citrus lift. Lemon, soft ash and sea salt see it out. This is a refined, citrus driven Islay smoke.
