Description
An 8 year old Caol Ila from the bottler Islay Cask Company, bottled at 60%, one of 141 bottles. Caol Ila makes a clean, maritime malt on the east coast of Islay. Tall stills and a clean cut give the spirit its oily, lemony lightness.
The spirit was distilled with a long fermentation and a clean cut, shaping the lighter side of Islay. First fill bourbon gave it a fuller vanilla and a touch of coconut. In these extractive early years the oak surrenders vanillin as vanilla and cis oak lactones as coconut, while guaiacol carries a vivid, lemony peat smoke. Sea air works into the maturing casks, lending a briny, coastal lift. Its peated character is built on malt smoked to a medium level of phenols. Most of its peated malt is destined for the Johnnie Walker blends. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
At cask strength 60% it is muscular. A coastal peat with citrus and pepper, with vanilla and a soft caramel from the wood. Smoke, lemon and a saline minerality fill the middle. A long, coastal finish carries a peaty warmth. This is Caol Ila's lighter, maritime Islay smoke.
