Description
An 8 year old Caol Ila, this distilled in 2007 from the Pitlochry bottler Signatory Vintage, from cask 315329 + 315330, bottled at 46%. Caol Ila wears its Islay smoke more lightly than its southern neighbours. Port Askaig is a tiny settlement on the rugged east coast of Islay.
Distilled slowly from peated malt for a refined island smoke, giving a clean, lemony peat. A refill hogshead held it quietly, the spirit left to lead. At an extractive age eugenol lends a clove note and oak lactones a coconut sweetness, the guaiacol smoke bright and fresh. Caol Ila's smoke leans to lemon, olive oil and brine rather than tar or iodine. A slow maturation in the cool island air keeps the spirit fresh and oily. Years in oak round the smoke, the peat mellowing while the brine stays. Olive oil and lemon sit at the heart of the Caol Ila character.
At 46% it is soft, oily and bright. Peat smoke, citrus and a soft oil, with a light bourbon sweetness. Beneath the smoke run lemon, brine and a peppery oil. A long, coastal finish carries a peaty warmth. This is a clean Islay smoke from the island's largest distillery.
