Description
The independent Hunter Laing bottled this Caol Ila, a 7 year old, distilled in 2009, from cask HL 13334, bottled at 50%, one of 403 bottles. Caol Ila has been bottled at every age from young and fierce to old and waxy. The original Victorian distillery was almost entirely rebuilt in the modern era.
Here the spirit was distilled in tall stills that lend the smoke an oily lightness, giving a bright, citrus driven peat. A tired refill cask added little but time, the make speaking clearly. In its extractive youth the spirit takes vanillin vanilla and lactone coconut quickly, the peat phenols vivid and lemony. The make balances phenolic smoke against a bright, oily citrus. Tall stills and a clean cut give the spirit its oily, lemony lightness. Active wood frames the smoke without smothering the citrus beneath. The clean, oily spirit takes cask flavour well while holding its citrus and smoke.
At 50% without water it is rich and full. Ashy smoke, lemon oil and a saline tang, with a soft vanilla from the oak. The palate is oily and smoky, with a green citrus lift. A long, coastal finish carries a peaty warmth. This is a refined, citrus driven Islay smoke.
