Description
The Glasgow bottler Douglas Laing released this Caol Ila, a 6 year old, distilled in 2010, from cask DL 11746, bottled at 46%, one of 387 bottles. Caol Ila is the smoky backbone of the Johnnie Walker blends. Diageo's Special Releases have featured both peated and unpeated Caol Ila.
The spirit was run through tall copper stills that keep the smoke light, for the clean island smoke prized by blenders. A bourbon barrel held it, the oak lending vanilla and a little cream. In its extractive youth the spirit takes vanillin vanilla and lactone coconut quickly, the peat phenols vivid and lemony. The oily texture comes from the spirit cut, the cask adding depth around it. It was founded by Hector Henderson and later passed to the Distillers Company. The cool Islay air gives a slow, steady maturation by the shore. The spirit's high notes of lemon and grass survive even long maturation.
At 46% it is smooth and clean. Peat, smoked fish and a citrus oil, with vanilla and a soft caramel from the wood. Smoke, lemon and a saline minerality fill the middle. The finish is long, smoky and citrussy. This is a clean, smoky Islay single malt from Caol Ila.
