Description
A Caol Ila of a 16 year old chosen by the Pitlochry bottler Signatory Vintage, distilled in 2007, from cask 5, bottled at 58.5%, one of 661 bottles. Caol Ila is one of the largest malt distilleries in all of Scotland. The distillery was expanded again in the 21st century to meet blend demand.
The spirit was worked from peated malt for the lighter Islay style, giving a clean, lemony peat. Ex-Sherry wood added a dried fruit richness beneath the smoke. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, structured grip, the smoke now mellow. The lighter style means the cask and the citrus speak alongside the peat. It was founded by Hector Henderson and later passed to the Distillers Company. Port Askaig is a tiny settlement on the rugged east coast of Islay.
Bottled at a cask strength 58.5%, it is intense. Smoked lemon, brine and a green olive note, with dried fruit, fig and walnut from the cask. It is clean and coastal, the peat and lemon to the fore. Smoke and sea salt see out a long finish. This is a clean, smoky Islay single malt from Caol Ila.
