Drawn by the Pitlochry bottler Signatory Vintage, a 13 year old Caol Ila, at 57.1%. Smoke, sea spray and an oily lemon fill the glass, with dried fruit, fig and walnut from the cask. An east coast Islay distillery on the narrow Sound of Islay. The distillery sits below a steep brae on the shore. This is an Islay malt of clean smoke and bright citrus.

Description

The Pitlochry bottler Signatory Vintage selected this Caol Ila, a 13 year old, distilled in 2012, bottled at 57.1%. Caol Ila has been bottled at every age from young and fierce to old and waxy. Port Askaig is a tiny settlement on the rugged east coast of Islay.

It was drawn off a high cut from peated barley, for a clean, coastal, oily make. A sherry cask wrapped the spirit in dried fruit and a nutty depth. Integration sees eugenol (clove) and vanillin (vanilla) fold into the spirit, the medicinal smoke gentler now. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. Maturation by the sea gives the malt its mineral, sea spray character. The clean spirit shows the cask clearly, which is why it suits so many wood types. The spirit's high notes of lemon and grass survive even long maturation.

At 57.1% without water it is rich and full. Peat smoke, citrus and a soft oil, with dried fruit, fig and walnut from the cask. A sea salt and an olive oil note sit under the smoke. It finishes smoky, oily and bright. This is a clean Islay smoke from the island's largest distillery.
