Description
The bottler 82 Chapters to Newcastle (82NC) bottled this Caol Ila, a 12 year old, bottled at 59.6%. Caol Ila has been bottled at every age from young and fierce to old and waxy. Long fermentations build the fruity, citrus notes that sit beneath the smoke.
The spirit was made from medium phenol malt on soft Loch nam Ban water, for the clean island smoke prized by blenders. A refill hogshead held it quietly, the spirit left to lead. By the integrating teens harsher congeners fade and ethyl esters build, lending a riper citrus over the softening peat. The make balances phenolic smoke against a bright, oily citrus. Its spirit also feeds blends such as Bell's and Black Bottle. A slow maturation in the cool island air keeps the spirit fresh and oily. Maturation by the sea gives the malt its mineral, sea spray character. The spirit's lightness lets sherry, wine and bourbon casks all show through.
At 59.6%, undiluted, it is bold and clean. A coastal peat with citrus and pepper, with a light bourbon sweetness. Lemon, olive oil and a soft ash run through the middle. A long, briny finish ends on lemon and soft smoke. This is a maritime, lemony Islay single malt.
