The Pitlochry bottler Signatory Vintage bottled this Caol Ila, a 12 year old, at 60.7%. The peat here is bright and lemony over an oily, maritime body. Caol Ila is the largest distillery on Islay. Among the most widely traded of Islay’s single malts. It is Diageo’s largest Islay distillery by some way. This is a bright, coastal Islay malt of poise.

Description
A 12 year old Caol Ila, this distilled in 2012 from the Pitlochry bottler Signatory Vintage, from cask 308784, bottled at 60.7%, one of 270 bottles. Caol Ila stands below a steep brae on Islay's rugged east shore. The distillery was expanded again in the 21st century to meet blend demand.
This was distilled slowly from peated malt for a refined island smoke, for a clean, coastal, oily make. An American oak hogshead added vanilla and a light toffee. Integration sees eugenol (clove) and vanillin (vanilla) fold into the spirit, the medicinal smoke gentler now. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays. A slow maturation in the cool island air keeps the spirit fresh and oily. Its peated character is built on malt smoked to a medium level of phenols. The malt is medium peated, giving a cleaner smoke than the south shore Islays.
At cask strength 60.7% it is muscular. A fresh peat smoke over oily lemon, with a light bourbon sweetness. Soft smoke and citrus sit behind the cask. A long maritime smoke closes it. This is a maritime, lemony Islay single malt.
