Description
The independent Murray McDavid released this Caol Ila, an 11 year old, distilled in 2014, from cask 1975780, bottled at 55.8%, one of 299 bottles. Caol Ila sends more spirit to independent bottlers than almost any malt. The six tall stills sit behind picture windows looking out to Jura.
It was drawn off a high cut from peated barley, shaping the lighter side of Islay. Years in ex-Bourbon wood lent a soft vanilla and a coastal calm. Through integration the spirit and cask settle, lactone coconut and a soft vanillin balancing the easing phenols. Long ageing turns the young, sharp peat into a soft, coastal smoke. The clean, oily spirit takes cask flavour well while holding its citrus and smoke. A ferry crosses the Sound from Port Askaig to Jura and the mainland. The original Victorian distillery was almost entirely rebuilt in the modern era.
At a full 55.8% it is bold and oily. Peat smoke, citrus and a soft oil, with vanilla and a honeyed edge from the cask. The texture is oily, the smoke threaded with citrus. The close is long, smoke over a citrus lift. This is Caol Ila's lighter, maritime Islay smoke.
