    This Caol Ila, the bottler Flickenschild, at 58%. A coastal smoke runs to lemon, olive oil and a peppery lift. It is Diageo’s largest Islay distillery by some way. The distillery looks out to the Paps of Jura. The spirit is matured largely on the mainland. This is an Islay malt of clean smoke and bright citrus.

    A Caol Ila drawn by the bottler Flickenschild, distilled in 2011, from cask 900032, bottled at 58%, one of 129 bottles. Caol Ila is one of the largest malt distilleries in all of Scotland. Water falls to the distillery from Loch nam Ban in the hills above.

    It was distilled in tall stills that lend the smoke an oily lightness, building the elegant Islay smoke at its heart. An American oak cask shaped it, soft and sweet beneath the peat. Integration sees eugenol (clove) and vanillin (vanilla) fold into the spirit, the medicinal smoke gentler now. The tall stills and a high cut give a lighter, cleaner spirit than the southern Islays. Olive oil and lemon sit at the heart of the Caol Ila character. A clean smoke and a coastal salt define the distillery style. The spirit's high notes of lemon and grass survive even long maturation. The peat here is medium rather than heavy, so fruit and smoke share the glass.

    At cask strength 58% it is muscular. Smoke, grapefruit and a maritime salt, with a soft vanilla from the oak. The oily body carries the smoke long and clean. The smoke fades slow over citrus and a mineral tang. This is Caol Ila's lighter, maritime Islay smoke.
