Water comes from Loch nam Ban, above the distillery. An east coast Islay distillery on the narrow Sound of Islay. This is a maritime Islay malt, smoke worn lightly.

Description
The Pitlochry bottler Signatory Vintage selected this Caol Ila, a 10 year old, distilled in 2010, from cask 316634, bottled at 60.3%, one of 660 bottles. Caol Ila is among the most widely traded of Islay's single malts. Its spirit also feeds blends such as Bell's and Black Bottle.
The spirit was distilled with a long fermentation and a clean cut, for a clean, coastal, oily make. An Oloroso hogshead lent raisin, fig and a savoury edge. Through the integration phase spirit and wood marry, vanillin settling into a rounded vanilla as the guaiacol phenols mellow into a softer smoke. Active wood frames the smoke without smothering the citrus beneath. Tall stills and a clean cut give the spirit its oily, lemony lightness. The medium peating leaves a smoke that is firm but never heavy. The malt is medium peated, giving a cleaner smoke than the south shore Islays.
At a hearty 60.3% it carries real weight. Peat smoke, citrus and a soft oil, with dried fruit, fig and walnut from the cask. A maritime salt and a lemon lift run through it. The finish is long, smoky and citrussy. This is one of the most versatile of the Islay malts.
