This Caol Ila was bottled by the Pitlochry bottler Signatory Vintage, a 10 year old, at 58.1%. An elegant smoke carries grapefruit, salt and a green olive note, with dried fruit, fig and walnut from the cask. Water comes from Loch nam Ban, above the distillery. A workhorse of the blending halls and a favourite of malt drinkers. This is the lighter, citrus driven face of Islay.

From the Pitlochry bottler Signatory Vintage, a 10 year old Caol Ila, distilled in 2010, from cask 316623, bottled at 58.1%, one of 493 bottles. Caol Ila is an Islay malt of clean, oily, citrus driven smoke. The six tall stills sit behind picture windows looking out to Jura.
Worked from peated malt for the lighter Islay style, for an oily smoke that leans to lemon and brine. A sherry butt held it, the wood lending raisin and walnut. Integration sees eugenol (clove) and vanillin (vanilla) fold into the spirit, the medicinal smoke gentler now. Sea air works into the maturing casks, lending a briny, coastal lift. The clean, lemony smoke has made it a favourite of blenders for generations. Maturation by the sea gives the malt its mineral, sea spray character. It was founded by Hector Henderson and later passed to the Distillers Company.
Undiluted at 58.1%, it is powerful. Ashy smoke, lemon oil and a saline tang, with dried fruit, fig and walnut from the cask. An oily smoke coats the palate, citrus and brine behind. The finish is clean, smoky and maritime. This is Caol Ila's lighter, maritime Islay smoke.
