Distilled in June 2008 and bottled in 2021 at 55.1 percent ABV, this Causeway Collection release examines the influence of French oak finishing on a well matured Bushmills spirit.
The whiskey spent its primary maturation in a combination of oloroso sherry butts and ex bourbon barrels, establishing a base of dried fruit richness, vanilla sweetness, and balanced oak structure. It was then transferred to French oak casks made from timber sourced in the Jupille forest in western France. Oak from this forest is valued in cooperage for its fine grain and measured tannin delivery, which tends to enhance spice, texture, and aromatic detail without overwhelming the underlying spirit.
Aromatically, the profile shows dark and ripe fruit notes including plum, blackberry, cherry, and grape, layered with warm spice and subtle herbal tones. On the palate, orchard fruit character becomes more prominent, with ripe pear and apple supported by nougat, marzipan, and light toffee sweetness. The French oak contributes gentle peppery spice and a polished wood presence that builds structure rather than weight. The finish is composed and persistent, carrying fruit sweetness, restrained spice, and integrated oak.
Bottled at cask strength without chill filtration, the whiskey retains clarity of flavour and a textured mouthfeel, allowing the combined influence of sherry, bourbon, and French oak to remain clearly defined.
