Bushmills The Causeway Collection 2000 Port Casks

This release forms part of the Causeway Collection, a series launched to showcase long term single cask and single cask type maturations that prioritise wood driven flavour development over blending or short finishes.

Distilled in November 2000, the spirit follows a triple distillation regime, producing a lighter and more refined new make with reduced higher alcohols and an elevated ester base. This clean distillate profile is particularly suited to fortified wine maturation, allowing secondary cask chemistry to dominate without sulphur interference or excessive fusel oil contribution.

The whiskey was matured entirely in first fill ruby port casks for over 20 years. These casks introduce a high concentration of residual sugars, wine derived acids, and polyphenolic compounds. Over time, esterification reactions between organic acids and ethanol increase the formation of red fruit and dark berry aromatics, while slow oxidative processes promote aldehyde development and perceived sweetness. Tannin extraction from the oak provides structural grip, counterbalancing the sugar influence of the port seasoning.

Bottled in June 2021 at 54.1 percent ABV, the whiskey is presented at natural cask strength, preserving fatty acid esters and oak lactones that would otherwise be muted through dilution or chill filtration. The resulting profile is dense and high intensity, driven by dark fruit, cocoa, sweet spice, and integrated oak, with a long finish shaped by wine cask tannin rather than raw wood bitterness.

This was an Ireland exclusive release limited to 2322 bottles, positioned as a technically expressive example of extended ruby port cask maturation applied to a mature Irish single malt.
