    Distilled on 1 August 1990 and bottled in September 2020, this 30 year old single malt from Bushmills forms part of the early phase of The Causeway Collection. It predates the later 30 and 32 year old releases from the series and was bottled exclusively for the Irish Whiskey Collection at Cork and Dublin Airports, with a limited outturn of 432 bottles.

    After long maturation, the whiskey was finished in new American oak and bottled at 48.4 percent ABV. This bottling strength is notably more generous than the later New American Oak finished releases, allowing greater retention of aromatic compounds and a firmer structural profile. At this age, alcohol strength plays a critical role in carrying flavour, as volatility and ester lift naturally decline after decades in cask.

    Over thirty years, the spirit has undergone extensive oxidative ageing. Oxygen ingress through the wood drives the slow conversion of alcohols and acids into more stable esters, shifting flavour away from bright fermentation fruit toward deeper, integrated notes. Evaporation steadily reduces volume and alcohol content, concentrating flavour while softening texture. By this stage, most refill casks are largely exhausted, contributing little beyond oxygen exchange.

    The use of new American oak at this point reintroduces active wood compounds. Virgin oak contains high levels of lignin, hemicellulose and unspent oak lactones. As these break down, they contribute vanilla, light caramel, sweet spice and a controlled tannic structure. Unlike wine casks, which tend to push fruit character, new American oak primarily reinforces framework and clarity, giving shape to spirit that has already softened through age.

    On the nose, the whiskey shows ripe fruit supported by vanilla and warm oak spice. The palate is rounded and textured, with honeyed sweetness, gentle spice and a clear oak backbone that provides definition without bitterness. The higher bottling strength helps maintain balance between wood influence and long matured spirit, preventing the profile from flattening or becoming overly delicate. The finish is persistent, with lingering oak spice and soft fruit carried evenly to the end.
