Description
Bozal takes its name from the Spanish for wild or untamed, and this artesanal ensamble blends three agaves cooked, fermented and distilled together: Espadin, Agave angustifolia, for balance, Barril, a rounder, earthier form of the karwinskii family, for light smoke, and Mexicano, Agave rhodacantha, for savoury, spicy complexity. The agaves are gathered from the steep slopes of Oaxaca and Guerrero, with Bozal replanting in hillside nurseries as it harvests.
The combination yields a full bodied, layered joven that stays approachable. Aromas run exotic and earthy with spiced smoke, citrus fruit and green herbal notes, while the palate carries a lightly smoky, herbaceous undertone alongside citrus, floral lift, cooked agave and spice. Distilled in copper in the artesanal style and bottled at 47%, it shows the wild agave character without tipping into heavy smoke.
