Description
Bozal Sacrificio Borrego is a pechuga style joven mezcal from the brand's Sacrificio series, identifiable by its tobacco brown bottle, made in small batches in Oaxaca. Bozal, Spanish for wild or untamed, works with wild agaves, and the Sacrificio line introduces locally sourced proteins, fruit and grain into the final distillation. This bottling is a borrego, or lamb, pechuga, a seasonal tradition made year end for personal use and local celebrations.
The agave is crushed by a bull driven tahona stone wheel, pit roasted, fermented and distilled. During the second distillation seasonal wild fruits including strawberry, apple and pineapple, plus pecans and ginger, are added, with a lamb leg suspended in a basket at the base of the still. The meat tempers and rounds the spirit rather than tasting of itself. A dry mineral base carries fruit, herb and nut, vinegar and pickled onion, with bright citrus, persimmon and a soft smoked finish at 47%.
