Description
Bosco del Merlo makes this single-vintage Prosecco DOC from Glera with a share of Pinot Grigio, the grapes picked in the early hours of mid September to hold their freshness. After soft pressing and a temperature controlled fermentation at 14 to 16 degrees, a small amount of fresh Glera juice is added ahead of the second fermentation. That second fermentation runs by the tank method over two months in stainless steel at 13 to 14 degrees, which gives the wine its fine, creamy perlage while preserving the primary fruit. The extra dry dosage leaves a gentle fruity roundness, keeping the wine balanced and accessible.
The colour is pale straw with green tints and a fine, persistent bead. The nose leads with pear, green apple and acacia blossom, here reading as white flowers and honeysuckle, with white peach and a lemon note behind. The palate is fresh and creamy, the soft mousse and gentle fruity sweetness balanced by clean acidity to a long, clean finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It works as an aperitif and suits white fish, light salads and lighter poultry.
