Beara Distillery, on the Beara Peninsula in West Cork, put its label on this Black Cask blend, built from Great Northern Distillery stock from Dundalk, Co. Louth and bottled at 40% for the German market in 2021. It is the bonder model in modern form, a coastal Cork house selecting and bottling sourced whiskey under its own name.
First-fill American oak bourbon casks did the maturing, the most generous kind of bourbon wood, giving vanilla, nutty toffee and soft orchard fruit over a light grain sweetness. At 40% it is an approachable, gently sweet blend, its dark name notwithstanding, and a straightforward introduction to the wave of small Irish labels working with Dundalk spirit.
