Description
Ampersand is a father-and-son project, the work of Stephen and Jeremy Schacht, engineers by training who turned their know-how toward distilling on a Cowichan Valley farm. This blueberry expression is a deliberate meeting of worlds: the botanicals are selected in Spain, while the spirit itself is distilled in England, a split designed to marry sunshine fruit with British precision.
It pours a pale blue and smells of ripe blueberries and hedgerow berries. The palate is balanced and floral, fruit-forward without tipping into sweetness, closing soft and long. Build it tall over ice with a light tonic and a few fresh blueberries dropped in to echo the fruit.
