Description
This LMDW edition pairs Kirk and Sweeney rum from the Dominican distillery Bermudez with a Sauternes finish chosen by independent bottler 3 Badge Mixology. The base is a young Spanish-style ron of around five years, and the project is very much a cask-finishing exercise rather than a showcase of the spirit itself.
Column distilled from molasses and finished in Sauternes wood at 40%, it is pale and wine-driven, with butterscotch and a whisky-like, slightly alcoholic nose giving way to caramel, creme brulee and a botrytised, sweet wine character on the palate. The finish turns hot and woody with black pepper. Honestly, the Sauternes dominates to the point where the rum recedes behind it, so this suits drinkers chasing a dessert-wine-soaked sweet finish more than those wanting Dominican ron character to lead.
