Description
Xaman Espadin Destilado con Citricos is a destilado con mezcal from the modern Oaxacan brand Xaman, built on the same organic, electricity free Espadin as its joven. It reworks the pechuga idea without meat: rather than suspending a breast in the still, the maestro adds a vegan recipe of mixed citrus fruits during the second distillation, so the spirit gains aromatic lift from fruit alone.
The agave is hand harvested at full maturity, cooked for at least five days in ground stone ovens, then naturally fermented and twice distilled, with the citrus charge introduced on the second pass before bottling. Pit roasting leaves a balanced smoke that frames the added fruit rather than burying it. The nose shows measured smoke threaded with citrus, and the palate stays semi dry and lightly sweet with well judged acidity, good neat or over ice. Bottled at 42%.
