Description
Xaman Espadin is a joven mezcal from a family run palenque in Santiago Matatlan, Oaxaca, made by maestro mezcalero Cutberto Santiago. It is a modern facing brand built on traditional method: the Espadin is organic, grown without pesticides or fertiliser, and the entire process runs without electricity, with a new agave planted for every one harvested.
The agave is hand harvested only at full maturity, around ten years, then cooked for at least five days in ovens of ground stone gathered from the nearby river. Natural fermentation, double distillation and direct bottling follow. The pit roasting gives a measured smoke rather than a heavy one, and the spirit reads balanced and approachable. Aromas of floral and caramel sit over the smoke, while the palate is semi dry with the fresh wild anise note typical of well made Espadin, a light sweetness and even acidity. Bottled at 42%.
