Description
Los Siete Misterios Espadin Tepeztate is a joven ensamble mezcal from the house of Julio and Eduardo Mestre, made in San Dionisio Ocotepec in Oaxaca's central valleys. It pairs cultivated Espadin with wild Tepeztate, Agave marmorata, a maguey that can take two decades or more to mature and brings a bright, herbal, fruit forward character to the blend.
The agave is roasted in an earth oven over wood and river stones, crushed on a horse drawn tahona, then fermented openly in wooden vats with wild yeast and spring water before a double distillation in copper pot stills. The nose leads with ripe citrus and tropical fruit over a balanced floral note and peach, the Tepeztate showing through the Espadin. Bottled at 45%, it keeps the agave and terroir of San Dionisio firmly in view.
