Description
Los Siete Misterios Doba-Yej is an Oaxacan joven mezcal from Espadin (Agave angustifolia); Doba-Yej is the Zapotec word for Espadin. It is the copper, tahona milled flagship of the brand founded by brothers Julio and Eduardo Mestre, and a batch led house: each lot is made by a different producer, so a given bottle comes from either Santiago Matatlan or San Luis del Rio. The label tells you which.
The piñas are pit roasted, crushed by tahona, wild fermented and double distilled in copper in the artesanal style, then bottled unaged at 44% to keep the agave and roast in focus. The flavour runs to lemon and roasted caramel with a floral violet edge and nuances of grapefruit and lime, closing on a fresh, lemony sweetness that lingers. Restrained smoke leaves the citrus and the Espadin backbone in the lead.
