Description
Se Busca, Spanish for wanted, is a joven mezcal made entirely from agave at the producer's own family distillery, named in tribute to the women of the Mexican Revolution. As an artesanal mezcal it follows the traditional path of pit or masonry roasting, stone or wooden crushing and copper pot distillation, the methods that give the category its rustic, savoury character.
Espadin, Agave angustifolia, is the cultivated backbone of Oaxacan style mezcal, balancing sweet roasted agave with a measured smoke. The pit roast shows in aromas of cooked agave and mesquite, the wood smoke note that comes from roasting the agave hearts underground rather than from any peat. On the palate it offers a hint of nuts, fruit and green vegetables with moderate sweetness and a gentle warmth, bottled at 40 percent in a versatile style suited to sipping or mixing.
