Description
Cabal is a USDA Organic certified reposado whose blanco and reposado are now made at the brand's own distillery, NOM 1646, Destiladora La Roca. The agave is estate grown on biological and biodynamic parcels under careful crop rotation, planted in 2018 and harvested in 2024 at full ripeness, and the brand sits among the additive-free leaning, transparent producers tracked on Agave Matchmaker. The name nods to the idea of doing things exactly and deliberately.
Production is detailed and traditional in feel: the agave is roasted twenty six hours in a stone brick oven, extracted with a roller mill, fermented seventy two hours with the field's own yeast and twice distilled in copper. It then rests eight months in toasted American white oak, a mix of former bourbon and rye casks. That rye influence shows as added spice, so the profile is roasted agave, caramel, cinnamon, baking spice and minerality, drier and less sweetly vanilla than many reposados, with a light butterscotch note.
