Description
Cabal Blanco is a USDA Organic certified Tequila Blanco of 100% Blue Weber agave, drawn from a single estate field planted in 2018 and harvested in 2024, with each biodynamic plot on crop rotation. The blanco and reposado are made at the brand's own distillery, Destiladora La Roca, under NOM 1646, distinct from the earlier Cabal expressions.
The estate agave is roasted twenty six hours in a brick oven, extracted on a roller mill, fermented seventy two hours with the field's own yeast, then twice distilled in copper using the distillery's deep well water. The nose is earthy with cooked agave and green plants recalling celery and green pepper, lifted by mint and grape, while the palate turns sweet and fruity with pear, cider, cherry and grape before a spicy, mildly peppery finish. Bottled at 40%.
