Description
Cabal Anejo is a USDA-Organic tequila produced at Tequila Las Americas, NOM 1480, in the El Arenal area of the Jalisco lowlands. It belongs to the small group of estate tequilas, with Blue Weber agave grown on a single biodynamic field, planted in 2018 and harvested in 2024 at a ripe 29 to 35 brix. Each parcel is farmed organically under a deliberate crop rotation, and the distillery draws on its own deep-well water.
The agave is roasted 26 hours in a stone brick oven, milled on a roller mill, fermented 72 hours with the field's own yeast, then twice distilled in copper. Maturation runs 18 months across three casks, both ex-bourbon and French oak, and the tequila is bottled additive-free at 44%. Expect baked agave underneath vanilla, caramel and a warm note of toasted oak, with the lowland soil lending an earthy, savoury frame.
