Calle 23 Reposado is a 100% Blue Weber tequila at NOM 1545 in San Jose de Gracia, the highland house of French biochemist Sophie Decobecq, still a rare thing as a woman led and foreign founded distillery in Jalisco. Her signature is a set of proprietary cultured yeast strains, with a different strain chosen for each expression, and the brand carries an additive-free position.
Following fermentation and distillation, this reposado rests just eight months in oak, a deliberately short stay that keeps the wood in a supporting role. Fine woody notes meet sweet sugar tones, butter caramel and cooked agave, with nutty hints and very discreet vanilla. The brevity of the rest lets the typical cooked-agave character stay present rather than ceding to oak, and the whole drinks light, balanced and very mild on the finish.
