Description
Calle 23 is the work of Sophie Decobecq, a French biochemist who distils at NOM 1545 in San José de Gracia, in the Los Altos highlands of Jalisco. Her signature is proprietary cultured yeast, with a different strain chosen for each expression, and the house is producer stated additive-free. This Anejo is built from agave reported up to ten years old and is not made in large batches.
The spirit rested sixteen months in small ex bourbon barrels, which gives it a deep golden colour and a nose of walnut, caramel and gentle vanilla over the typical scent of cooked agave. The palate is balanced, opening with a clear wood note that gives way to layered flavours including coffee bean and a little tobacco. Bottled at 40%, it shows the influence of American oak while keeping the precise, yeast led clarity the house is known for.
