Description
Aha Toro is a 100% agave anejo made at the Hacienda El Olvido in the Los Altos highlands of Jalisco, where the brand has worked for close to a century. The agave is grown on the family highland fields and crushed in the old way with a tahona, the volcanic stone wheel that crushes rather than shreds the cooked fibre, giving a rounder, more textural spirit. Every step is done by hand and each bottle is treated as its own object.
Maturation runs a full two years in 200 litre ex Jack Daniel's barrels of American white oak, a longer rest than most anejos receive. That time in sweet American oak shows as brown sugar, coffee and oak with a touch of nougat, while the spirit keeps a chilli and rye spice and a silky weight across the palate. The result leans rich and barrel shaped while the highland agave holds a sweet core underneath.
