Cimarrón Blanco is an additive-free 100% Blue Weber agave blanco produced at La Tequileña, NOM 1146, by master distiller Enrique Fonseca, one of the largest agave growers in the Los Altos highlands and the maker behind the extra añejo Tears of Llorona. Cimarrón is the deliberately plain, screwcap, terroir driven everyday bottling from the same house, long a favourite of bartenders for its agave depth at a fair price.
A blanco shows the agave and the distillery's hand most directly, with no cask to hide behind. This one carries a hearty cooked agave note alongside black pepper, citrus and green olive, with vanilla and a touch of cinnamon, then a vegetal, earthy palate that keeps a fresh agave bite. Bottled at 40% and verified additive-free, it is a clean, structured highland blanco built around the plant rather than smoothing agents.
