Description
Cimarron is a 100% agave reposado made at La Tequileña, NOM 1146, under master distiller Enrique Fonseca, one of the largest agave growers in Jalisco. The agave is grown in the high country of Los Altos, where the cooler highland soil tends to give the piñas a deeper base sweetness than lowland fruit, and the brand is built as an honest, agave forward tequila for sipping or mixing.
The agave hearts are cooked slowly under low pressure in autoclaves, then fermented and distilled to 40%. The spirit rests four months in American oak barrels before it is bottled without any additives. The aroma is savoury with cooked agave, oak, caramel, butter, pepper and a little vanilla and cinnamon, and the palate follows it closely, soft and earthy with the same cooked agave, oak and caramel. The house makes no anejo by deliberate choice.
