The Illusionist earns its name with a trick of pigment: poured deep blue, it blushes to soft pink as tonic lowers the acidity. Behind the spectacle sit sixteen botanicals gathered from across the world, angelica from Bulgaria, cardamom from Guatemala, chamomile and lemongrass from Egypt, mace from India, cranberries from Germany and lavender from France, all distilled in a copper pot still that lends the spirit a notably smooth weave. This run was a limited edition of 2,560 bottles.
The nose offers lemongrass and citrus over lavender and chamomile, warmed by cardamom and ginger. The palate is complex and layered, fresh citrus and tart cranberry threaded with cardamom spice and a soft floral note, before a long, refreshing finish with a warm spiced depth. Build it into a G&T to watch the colour turn, and finish with a wheel of lemon.
