Description
A Glenburgie of a 27 year old chosen by Signatory Vintage, distilled in 1995, from cask 6668, at 57.7%, one of the festival bottlings. Glenburgie is a fragrant Speyside malt, a core flavour of Ballantine's for decades. It has belonged to Chivas Brothers, part of Pernod Ricard, since 2005. It sits near Alves in Moray, east of Forres, in the heart of Speyside.
The spirit was run slowly off the spirit still, for a light body with a gentle, waxy edge. A refill bourbon hogshead held it, keeping the fresh, fruity character to the fore. In the oxidative, evaporative years the spirit concentrates to tropical fruit, honey and a waxy, candle wax depth. A soft waxiness from the spirit carries a thread through the maturation. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The spirit deepens with time, the cask drawing out a soft beeswax.
At 57.7%, undiluted, it is rich and waxy. Pear, honey and a creamy oak, with a soft vanilla from the oak. The mouthfeel is light, a faint waxiness carrying the fruit. It finishes light, fresh and faintly waxy. This is a fruity Speyside malt rarely seen on its own.
