A 24 year old GlenAllachie from Hunter Laing, 1992, at 50%. Raisin, chocolate and a dark spice fill the glass. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. It matures in sixteen dunnage warehouses on the Aberlour site. This is a full bodied Speyside single malt of real richness.

Description
This GlenAllachie comes from Hunter Laing, the Glasgow bottler of the Laing family, a 24 year old, distilled in 1992, from cask HL 12307, at 50%, one of 180 bottles. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
The spirit was worked unhurried through the stillhouse, giving a full bodied Speyside spirit. A bourbon barrel held it, the wood adding a soft honey over the fruit. In the oxidative, evaporative years the spirit concentrates to dried fruit, dark chocolate and a waxy, resinous depth. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. Active first fill wood drives the maturation, the cask deep in the malt.
At its natural 50% it is rich and chewy. Baked apple, honey and a dark chocolate, lifted by a sweet oak. Beneath it run dried fruit, dark sugar and a warm spice. A deep finish ends on dried fruit and a dark chocolate. This is a full bodied Speyside single malt of real richness.
