A 12 year old GlenAllachie from the distillery, at 60.9%. Raisin, chocolate and a dark spice fill the glass, with a nutty, raisined sweetness from the cask. Built for the blend boom of the 1960s, now a sherry led single malt. It runs very long fermentations for a thick, fruity, ester rich spirit. This is a full bodied Speyside single malt of real richness.

GlenAllachie from the distillery, a 12 year old, from 2007, cask 3772, at 60.9%, 289 bottles in all. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. It was built for the 1960s blend boom, its make long destined for the blender's vat.
It was worked unhurried through the stillhouse, giving a full bodied Speyside spirit. It was fully matured in a Madeira cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full spirit deepens with time, the cask drawing out its darker register. The casks are picked closely, the wood matched to the rich GlenAllachie make. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.
At a hearty 60.9% it carries real weight. Raisin, chocolate and a warm spice, with a nutty, raisined sweetness from the cask. A dark chocolate and a soft oak give it weight. A long finish carries raisin, chocolate and a treacle. This is a full bodied Speyside single malt of real richness.
