A 10 year old GlenAllachie from Murray McDavid, 2008, at 50%. Deep and dark, all baked apple, honey and a chocolate, with dried fruit, fig and walnut from the cask. Its four stills carry downward angled lyne arms for a fuller spirit. It runs very long fermentations for a thick, fruity, ester rich spirit. This is a rich, sherried Speyside single malt.

Description
A GlenAllachie of a 10 year old chosen by Murray McDavid, distilled in 2008, from cask 180845 + 181845, at 50%, one of 600 bottles. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
The spirit was distilled to a full, generous cut, shaping a rich Speyside body with real weight. It was matured in an Oloroso cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Active first fill wood drives the maturation, the cask deep in the malt. The wood frames the spirit without ever stripping the full Speyside body. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The casks are picked closely, the wood matched to the rich GlenAllachie make.
At 50%, undiluted, it is dark and full. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. The finish is long, rich and spiced. This is a dark, fruity Speyside single malt.
