Description
A distillery release of GlenAllachie, a 10 year old, from 2011, cask 7851, at 60.2%, 314 bottles in all. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.
It was distilled in copper pot stills, giving a full bodied Speyside spirit. It was fully matured in a Moscatel cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full spirit deepens with time, the cask drawing out its darker register. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
At a natural 60.2% it is full and rich. Fig, walnut and a bittersweet chocolate, with a grapey, floral sweetness from the cask. A dark chocolate and a soft oak give it weight. A deep finish ends on dried fruit and a dark chocolate. This is a Speyside single malt of real standing.
