Description
Fettercairn from the distillery, a 7 year old, from 2016, at 51.2%. Fettercairn is a fruity Highland single malt made at one of Scotland's oldest licensed distilleries, founded in 1824. Its stills carry unique cooling rings, copper tubes that drench them in cold mountain water.
Made on mountain water with the stills drenched in cold water, for the tropical, fruity make Fettercairn is known for. Maturation came in ex-Bourbon wood, the oak quiet behind the fruity spirit. Young and extractive, the cask sheds vanillin (vanilla) and toasted sugars (light caramel) over the tropical spirit. Active wood frames the fruit without overwhelming the light Highland spirit. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. A gentle maturation suits the light make, the tropical fruit growing richer with time. The cooling rings raise reflux and copper contact, so only the lightest vapours rise, for a tropical spirit.
At a natural 51.2% it is full and fruity. A clean, fruity sweetness, with a soft vanilla from the oak. Mango, citrus and a creamy vanilla fill the middle. It finishes long, fruity and clean. This is Fettercairn, one of Scotland's oldest licensed distilleries.
