    A 20 year old Dalmore from the distillery, at 56.6%. Dried fruit, orange and a dark chocolate depth fill the glass. Much of its sherry comes from the aged Oloroso casks of Gonzalez Byass. Dalmore is a Highland distillery on the Cromarty Firth, famous for its sherried malt. This is Dalmore’s opulent, chocolate orange style.

    This official Dalmore, a 20 year old, from 1991, cask 27, at 56.6%, 761 bottles in all. Dalmore was founded in 1839 by Alexander Matheson and long run by the Mackenzies. Its flat topped wash stills and water jacketed spirit stills build a thick, rich, oily spirit.

    It was worked through flat topped and water jacketed stills for a rich, oily spirit, to build a rich, sherry loving character. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, tannic grip. Vanillin and oak lactones from the wood lend vanilla and coconut over the rich malt. Long ageing turns the fresh orange towards marmalade, dark chocolate, coffee and a warm spice. The Dalmore range climbs to some of the oldest and most expensive whiskies in the world. Maturation in the cool north keeps the rich spirit balanced over the years.

    At cask strength 56.6% it is full bodied. A rich, oily chocolate orange, with a soft vanilla from the oak. Beneath it run orange, dark chocolate and dried fruit. The finish is long, rich and chocolatey. This is a rich, full bodied Highland single malt.
